Honey and water won't feed your yeast.

Mead must is nutritionally barren. No free amino nitrogen, almost no vitamins, no minerals a yeast cell can use to build membranes and metabolize sugar cleanly. Leave it unfed and you get stuck fermentations, sulfur reek, rocket-fuel fusels.
